Ingredients

 

100g pearl barley

Olive oil

1 red onion peeled and finely chopped

Sea salt and freshly ground  black pepper

100g frozen peas

100 frozen runner beans

Vegetable stock

1 tbs flour

25g butter

Serves 2

Pearl Barley Stew

 

Method

Cook the pearl barley in boiling salted water for 50 minutes or until soft, drain and leave to steam dry. Next heat the a tbs of olive oil in a frying pan  and add the onion and and a pinch of salt. Cook on a low heat for about 10 minutes, add the barley and the peas and runner beans. cover  with the stock and bring to the boil. Simmer for 10 minutes stirring now and again.

Mash the flour and butter together in a separate dish into a paste and stir into the pearl barley and peas thickening the sauce. Simmer for a further 5 - 10 minutes.

Ready to serve
